Good recipes for liver?

For some reason, I'm on a liver kick, lol. I'm loving chicken liver-so far I've baked it, made it into pate and dumplings, and seared it. I just tried searing it tonight and omg it's amazing. I need different recipes though because I'm the only one in the house that cooks and my mom is a big baby-won't eat the same thing twice usually. She also doesn't digest fried food well, so that's out. I was also thinking of trying calves liver since I always see it in the store. How does that compare to chicken liver? I heard it's stronger but I soak all liver in milk to make it milder so could I just soak it longer? If I seared it would it be tender and buttery like chicken liver or tougher? Also, does anyone know where to get organic liver? I know liver is basically the toxin filter so even though we don't normally eat organic, it seems it would be wise if I'm going to cook liver a lot.
